The Culinary Inspiration Behind Our Christmas Menu


This year’s Christmas menu at CÉ LA VI is inspired by the festive spirit of the holidays and its time-honoured tastes. Our chefs have crafted a menu that reflects this inspiration, weaving the season’s joy and creativity into each dish. 

Available exclusively at our restaurant on the 24th and 25th of December, join us in celebrating Christmas from an exceptional vantage point, combining a gastronomic experience with the best panoramic views of Singapore.

Choice of First Starter

A4 Miyazaki Wagyu Carpaccio

Velvety, thinly sliced A4 Miyazaki Wagyu melds with the luxurious pop of Nomad Kaluga caviar, a harmonising of umami and briny elegance. The earthy undertones of pickled shimeji mushrooms add depth, crafting a dish that resonates with the opulence of Christmas.

Prawn Cocktail

Reinventing a classic, the succulent sweetness of fresh prawns dances with the fiery kick of Sriracha, creating a balance that’s both bold and refined. Nestled on a bed of crisp romaine lettuce, it’s a festive beginning that’s as visually striking as it is delicious.

Canadian Lobster Tail

A celebration of the sea’s bounty, this dish features tender, sweet lobster that harmonises exquisitely with the tangy zest of gooseberry. The addition of exotic carrot curry introduces a warm, subtly spiced undertone, creating a luxurious interplay where the freshness of the sea meets the vibrancy of the earth.


Potato, Leek & Caviar 

Elevating the humble spud with a luxurious twist, tender potatoes and subtly sweet leeks are complemented by the smoky notes of bacon. A drizzle of spring onion oil adds a fresh, aromatic dimension while the crowning caviar brings a briny contrast that elevates the ensemble. Together, they evoke the warmth and comfort found in a rustic hearth's glow.

Margaret River Short Rib
